Not sure if this is normal but when I set the drive mode to ‘high performance’ the main dials do not change colour.
I would have thought setting it to this mode would also change the Speed and rev counter to that mode too.
Is this normal, or is there a setting I’m missing for it to automatically change the screen with the drive mode.

No it doesn't change the dials, just the vehicle performance.
To change the dials etc you need to personalise the car setting. Go to settings, My Car, display (if I remember correctly). There's a few dial options in there
